 Post subject: Tandoori Pilaf Rice

125g basmati rice
250ml chicken stock
1 cinnamon stick
1 bay leaf
1 medium onion finely diced
1 clove of garlic finely chopped
50g butter
1 tbsp tandoori spice
1tbsp tomato paste

Preheat oven to 180c. Heat half the butter in a frying pan and add the onion and garlic, sauté without color until soft add in the tandoori spice and the tomato paste fry this off for a minute. Add in the rice and gently toast for a few seconds then transfer this into a casserole dish with a lid. Add in the chicken stock, the bay leaf and the cinnamon stick and place the lid on. Put this in the oven for 20 minutes once this comes out the rice should be cooked take the other half of the butter and mix this through the rice.

This method can be done with any type of rice you would like just substitute the spice and tomato paste. add in lemon juice and zest and use water instead of stock for a lemon rice or use tomato paste and basil for a tomato and basil rice experiment with it most things will work however some require a little more work than others.
